I made this the other night and OH MY it is delcious!
I don't like using heaps of processed ingredients so I try keeping it as minimal and healthy as I can using whole ingredients and of course making sure it tastes YUM!
Peanut sauce :
3/4 cup peanut butter ( made with peanuts and salt only )
3-4 tbsp low sodium soy sauce
1-2 tbsp algae
1 tbsp seasame oil
2 tbbsp rice vinegar
1/2 cup warm water
1/2 tsp ginger
2 small cloves garlic
1 tbsp lime juice
rest of dish :
2 large bok choy
2 tablespoons Hoison sauce
Tofu - 1 packet
Rice ( I use brown ) 2 cups
Mince the garlic or to save time just buy the garlic already minced and then add to a large mixing bowl
Add all peanut sauce ingredients in aside from the water and whisk together until smooth.
Slowly pour in your water until you get desired consistency is reached. I usually add more for a dressing and less for a sauce.
Add pepper flakes if you like some heat too.
Place your peanut sauce to the side and lets get cracking into the rest of the dish.
Boil water with a pinch of salt and cook your rice
While your rice is cooking add a generous splash of soy sauce and hoisn into a fry pan on medium/high heat and mix around.
Then add your bok choy and mix through until soft ( aout 5-10 minutes )
Sprinkle your seasame seeds through.
now add your tofu to the mix, cook until slightly crispy on either side.
Once your rice is finnished cooking, strain and add to serving plates.
Add your pan vege/tofu mix into your serving plates
Then lastly pour your peanut sauce over the top.
